Sunday Pizza

Steamed Eggs Sunday
Sleep was welcomed and most excellent. I didn't stir until 6 when I heard Kev get up, so I got up to pee. I crawled back into bed and dozed again until just after 7. I was groggy but ready to get up and going. I had a crap ton of laundry to do before I could pack for my Spring perusal of home. I was thrilled for the though of coffee with creamer and Splenda. I got bacon in the oven and made us each three steamed eggs to go with it. It was a bit chillier this morning so we didn't eat outside. The day was beautiful though. Sunny with blue skies and a high of 70 today. This would definitely mean a walk. But first, eat and get stuff done. First laundry then getting the suitcase out and starting to gather shoes.

Perfect Burger
I paid Q1 taxes, we put on our walking shoes and headed out. We did the town loop, dropping said taxes at the post office along the way. We stopped into JAX to look around and then made a stop at the grocery to get a few things. We got home and Kev fired up the grill. I formed up two half pound burger patties and he cooked them up perfectly. I melted on sharp cheddar with a topping of Colby jack and we enjoyed them with the rest of the beef casserole. It makes a nice side dish since it's kinda like broccoli rice casserole but with green chiles and green onion.

Pizza Night
After lunch we got the laundry all folded up and I put it away. I brought the clothes that were on the drying rack outside into the sun so they'd dry faster. I needed something sweet so made a batch of mini muffins using this recipe for Double Chocolate Muffins. I baked them too long so they were not so fudgy but Kev says the flavor was good. I made a quick cream cheese frosting to put on them with a little unswetened almond milk, powdered Swerve, some Splenda, chocolate Stevia and vanilla. I had half of a mini muffin and just some cream cheese goodness before going up to finish packing. At 6 I made us a pizza with fathead crust. On it was 2.5T pizza sauce, seasoned ground beef, pepperoni, black olives, red onion and mozzarella. We sprinkled on red pepper and grated parm and oh it was so wonderful. We watched the season 2 premiere of Killing Eve and had a cup of hot Sleepytime tea before early bed.
